I'd use whatever puts em' down. Plus a well placed shot will help too. The "whisper behind the ear" works the best.

I think hogs are soft......my opinion and experience....just put the bullet in the vitals...animal bleeds and meat in the freezer

Hog hunting is an extreme sport but also an addiction. I hunt hog year round in northwest florida and have been pretty lucky. Both rifles your mentioning are good hog guns. Any rifle will do the trick as long as you make a sensible shot. If your using a smaller caliber, such as a 223, 243, 22-250, etc. you will have to take out his lungs. If your very confident with your shot placement, then a shot just behind the ear will drop him in his tracks. If the two guns your choosing between is the 30-06 and 7mm...I would consider the one with less recoil, there are PLENTY of times while hog hunting that you will shoot a dozen times in a day. That many shots with the 7mm mag is brutal on your shoulder!
