That's exactly how hominy is made Reb , grits are just dried ground up hominy . Doesn't the lye taint the meat , or do you rinse the corn before use ?

Yep, I know that's the way it's made.I do rinse it with the hose though.
I use to have a friend at Dixie Lilly that use to give me hundreds of pounds of all kinds of out datedmeal that had weevil in it. That's been some years back.
Up in the mountainsof WNC where my wife is from, theres a Stone Mill whereher grandparentsuse to go and have thiers done. It's still milling, but as a tourist attraction.
