im wondering what set-ups i should use i have 2 game fish rods and one new ultra-light
it will be mostly steelheads/crappies/trouts and so on

First of all, fish are like deer. You don't catch Steelheads or Trouts, you can Trout. Similar to you don't shoot deers, you shoot deer.
Second off, your going to have a very difficult time finding Steelhead in the United States (unless you hit a good Skamania run) or are fishing big lakes (such as Lake Michigan).
To answer your question, trout are generally in rivers or moving water. They feed heavily on flies, minnows, and worms. Any of the previously stated baits should work. Look for "artificial lures only" sections of rivers and streams. In this case, use a spinner as a minnow, flies, etc.
Crappie are found in many lakes and love structure. They gorge on minnows and are caught well with live fathead minnows, flu-flu jigs or feather tail things.
