Check your brace height. Is the string between the two lines scribed on the barrel? If not, shoren in by twisting, or lengthen it by untwisting, until it is. Check your limb ends to make sure one of them isnt damaged.

Welcome to the Excalibur club. If your string is "jumping off the bow" it is most likely a brace height adjustment (it should be between the two lines on the rail)or that the end loops are to big. What string is on the crossbow? are the loops served or are they just twisted bow string?
You have purchased an excellent crossbow and the company really stands behind their product. They also have a terrific forum at: http://www.excaliburcrossbow.com/phpBB2/index.phpwhere you will also be able to get a lot of help.

It occurred to me that you may be using the wrong string. The earlier models with carved limbs take a different string than the current ones with molded tips. Check the excal site for details.

2 reasons a string jumps limb tips 1 its too long and hits the riser! 2 dry fires! twist it as they said bring the string up too highest line on rail and shoot it and let it stretch. never let it get below lowest line by the riser. if it hits riser it can and will damage string. more you twist a string the tighter the string and end loops get
