ok, i heard from quite a few people that wild turkey is tough as leather?is that true?

The breasts are delicious and tender, but are easily dried out if cooked wrong.

The legs are nearly inedible if cooked incorrectly.

Personally, I like to bread and fry the breasts in strips about 3/4" wide. They're incredible.

I put the legs/thighs in the crock pot with garlic and onions for about 8 hours. TASTEY!

i agree with proline, its all about how you cook it, my cousins have turkey hunted for yearsand their fvorite thing to do is deep fry the entire breast, little chewy on the outside but tender and juicy on the inside.

you pretty much have to know what you're doing regardless of what kind of wild game your cooking, most likely due to the low fat content of the meat, to easy to dry it out, especially turkey, venision and even pheasant.

In my area we have something called the spiedie. It's basically marinated meat on a stick grilled over Charcoal,served on Itialian bread and boy is it good. It works well with Turkey,Chicken,venison and pork.

Here's a recpie I found on the net.Spiedies
(Broome County, NY)

1 c Oil
3/4 c Wine Vinegar
1/8 c Sugar
1 Onion
4 Clove Garlic
1/2 t Salt
1/2 t Pepper
1 1/2 t Thyme
1 1/2 t Marjoram
1 1/2 t Basil
1 1/2 t Oregano

Mix all ingredients in a large covered bowl. Place cubed meat to marinate for at least 5 days, shaking or turning over each day. Place on skewers to cook on grill. Serve on Italian bread.

we fry the breast,and put the rest in a crock pot with an onion and carrot and cook all night.
take the meat out and strain the juice.use the juice to cook rice and put meat back into oven disk with rice,add eggs onion and mushroom soup and bake as a dressing.cook till it gets to the dryness you like.

greatest dressing you ever ate.[8D][8D]
