i agree with proline, its all about how you cook it, my cousins have turkey hunted for yearsand their fvorite thing to do is deep fry the entire breast, little chewy on the outside but tender and juicy on the inside.

you pretty much have to know what you're doing regardless of what kind of wild game your cooking, most likely due to the low fat content of the meat, to easy to dry it out, especially turkey, venision and even pheasant.
