In my area we have something called the spiedie. It's basically marinated meat on a stick grilled over Charcoal,served on Itialian bread and boy is it good. It works well with Turkey,Chicken,venison and pork.

Here's a recpie I found on the net.Spiedies
(Broome County, NY)

1 c Oil
3/4 c Wine Vinegar
1/8 c Sugar
1 Onion
4 Clove Garlic
1/2 t Salt
1/2 t Pepper
1 1/2 t Thyme
1 1/2 t Marjoram
1 1/2 t Basil
1 1/2 t Oregano

Mix all ingredients in a large covered bowl. Place cubed meat to marinate for at least 5 days, shaking or turning over each day. Place on skewers to cook on grill. Serve on Italian bread.
