Default summer sausage

Anyone ever eaten summer sausage?I had some the other day and its great,but the guy that made it gone back to the state of mississippi.Can anyone tell me how to make it,thanks

I make my own, I bought the seasoning packs from walmart, but added some extra kick to it with some hot peppers, you take the deer meat or any other type of wild game, grind it up and mix it with the pork, the ratio I use is 3 pounds of wild game to 2 pounds of pork, mix it all togethor and sit in the fridge for 12 hours, then take and stuff the sausage mix into the casings and either smoke or cook in your oven on low heat like 150f for 7 hours, good luck!

Here in WI what isn' t cut up for steak, stew or ground venison is made into Summer Sausage, Polish Sausage, Brautwurst, or Kubasa. Every butcher here or home sausage maker has a dozen recipes for a dozen type of Sausage.
If you don' t have it in your area here is the address for what is more than likely the best Old World Sausage makes in the USA.
