I love corn bread...anyone got any good recipies they wanna share?? Thanks!

I use Indean Head corn meal and the reciepe is on the bag here it is 1cup corn, meal, 1 cup sifted flour, 1/4 cup sugar, 3 teaspoons baking powder, 1 teaspoon salt, 1/4 cup shortning (crisco),1 cup milk, 1 egg beaten. Mix corn meal,flour,sugar,baking powder and salt in a bowl. Mix egg and milk together and add to dry ingriediants with a few strokes. Bake in a greased 9x9 pan for 20-25 min. I use a cast Iron Skillet to Bake it in. Quick,easy and good Enjoy

Take any good corn meal recipe...Like the one that Jersey gave you. Just do one thing different.

Get the iron skillet good and hot with a little grease in it before you put the bread mix in. Then when you pour it in, it makes a beautiful, crispy, tasty crust on the bottom. Then just bake as directed.

It' s gooder than July jam...........................

2 cups yellow corn meal
1/2 cup flour
1/2 teaspoon salt
1/2 teaspoon baking soda
3 tablespoons sugar
2 teaspoons baking powder
4 eggs
1 1/4 cups buttermilk
1/2 stick butter

Mix all dry ingredients together. Stir eggs into buttermilk and add to dry mixture. Melt butter inside heavy iron skillet. Coat skillet with butter on all sides. Pour remaining butter from skillet into cornbread batter and mix thoroughly. Pour the cornbread batter into hot skillet and bake in a 375 degree oven. Cook bread until it has a golden brown crust (approximately 25-30 minutes).

when you get your mix ready to cook,chip up 1/2 a holapenia(sp) pepper and add to mix." GREAT" . if you like it hot add a whole pepper chipped up.

I have made this recipe for guests on my cooking show as well as family. It has always been well recieved.
Spicy Scallion Corn Muffins

Stir together with a wisk (in a mixing bowl):
• 1 ½ cups flour
• 1 ½ cups corn meal
• 1 t. baking powder
• 1 t. chili pepper flakes
• ½ t. salt
In a separate mixing bowl beat together:
• 2 eggs
• 1 ¼ cups milk
• 1/3 cup honey
• 1/3 cup chopped scallions
• 2 T. corn oil
Add the wet ingredients to the dry ingredients and blend well.
Spoon the muffin mixture into a greased muffin pan, filing each cup ½ full.
Bake in a preheated, 350-degree oven for approx. 12 minutes.
