RE: Corn Bread
I have made this recipe for guests on my cooking show as well as family. It has always been well recieved.
Spicy Scallion Corn Muffins
Stir together with a wisk (in a mixing bowl):
• 1 ½ cups flour
• 1 ½ cups corn meal
• 1 t. baking powder
• 1 t. chili pepper flakes
• ½ t. salt
In a separate mixing bowl beat together:
• 2 eggs
• 1 ¼ cups milk
• 1/3 cup honey
• 1/3 cup chopped scallions
• 2 T. corn oil
Add the wet ingredients to the dry ingredients and blend well.
Spoon the muffin mixture into a greased muffin pan, filing each cup ½ full.
Bake in a preheated, 350-degree oven for approx. 12 minutes.
