Crackling is deep fried beef fat. At least thats what we called it when we took my grandpa's beef cattle to the locker plant. They always had a big bowl of it there at the locker plant. A little seasoning salt and you were good to go. Of course that was back in the mid-60's.......we try to eat healthier now. But boy I sure miss that.

Yup..Its just like the bagged pork rinds...but a heck of a lot better. These has a little bit of meat to go along with the crunchy skin. Best to fry them in lard though for real good flavor.
