I've got the jerky shooter and it works ok. I don't care for the jerky packets that come with it cause I like my jerky a little sweeter. I tried using my normal wet marinade that I use for muscle jerky in the ground jerky but it was almost tasteless. Does anyone have a sweet/spicy dry jerky recipe?

For those with a jerky shooter, do you like the flat jerky or stick jerky better?

i like flat better, its the way that all the companys do it, so it has to be the best way.

What keeps the jerky from falling apart? The ground I have has no added fat.

nny243 Go look at the post about sausage tubes/casings I posted some links there that sell a dry type mix that has every flavor you could want, I like Eldons Spicy seasoning, It is great for ground jerky.

You dont want fat in your jerky, but alittle is ok, if you use dry seasonings, just get yourself some Instacure #1 it only takes like a half tsp. to cure 5 lbs of meat it will kill any bacteria that fat or any meat has in it. If you buy the jerky shooter from walmart just mix your meat in a bowl, then spoon it into the shooter until it is all used, it does come with the curing salt also, 1 pack of salt cures 1 pound of ground meat.
