But for smoking Salmon ..for pan frying I agree with fresh caught trout especially brookies over a fire..

Crappie / Channel Catfish / Rainbow Trout

filet the crappie and catfish...
decapitate and gut the trout...

roll in meal and flour and place in a hot skillet with a bit of oil...make sure to fry the trouts tail fin...start there, they are delicious...

Lets say fresh mackeral. boil potatoes and two large onions. when 5 min left to cook turn off heat . plop in a couple of macs, cover and let the steam do the rest.

Cold season speckled perch are top of the line to me, Crappie for you northerners I say theres nothing crappie about em.
