To increase your odds for a clean harvest, use the largest diameter head your bow will shoot properly. I don't mean to confuse when saying large as in the weight of the head, but to clarify, use the largest cutting diameter your setup will launch with consistent accuracy. The weight of the head itself will be dictated by the arrow spine and draw poundage of your bow.
Fixed blade heads vs. mechanical heads for turkey is a matter of personal preference. I would use a turkey specific head over a conventional style hunting head. There are a number of them on the market to choose from, say, like the Gobbler Guillotine or the Steel Force Turkey head. Both are designed to limit penetration, which will help a great deal in bird recovery.
