I haven't been keeping the liver but this year I will, have you ever had duck or pheasant liver fried in soy sauce an butter?????? delicious!!!!!!

I use as much as I can get off a deer.The heart & liver I give away,the front quarters go into burger.I even keep the sinew and process that when it's dried.The hides I give to my taxidermist to use.

When I was 16 I did my first "on your own" cut job on a deer I had killed. When I told my father I was done he came down and inspected the carcass. "No way in hell your done boy don't EVER waist meat like that!" My jaw dropped as he pulled bits of meat from here and there. Lesson learned

Take it all (Except the gut pile) besides it's gone before I get back to the spot anyway. Save heart and liver for an Eagle sanctuary near my home as archery kills are the only meat they will accept. Rifle shots leave lead traces in the meat, bad for the birds of prey. Rib meat is a hassle to process but it is so sweet fresh off the bbq.
