Your way will work but you won't be as consistant or automatic nor shoot as well. That said, if you're only hunting your way will do fine. But there is a better way. LOL Your peep has to have a big enough opening to allow for you to have your sight ring inside your peep ring. It just works that way. LOL I shot your way for years and killed a ton of critters doing it. Peeps are cheap and can be reemed out.

Dude the peep in that first pic must be tiny lol.
If you are centering one pin with a normal sized peep, id bet its not too far off from centering the sight ring. You'd probably be able to switch methods easily, i know I did. I used to shoot your way back when I first picked up a bow, but found im more consistent with version 2.

Bottom if sight allows, top if it does not.
The reason I say this, I have a 1/4" verifier peep that centers perfectly with the housing on my 82nd.
On my General, I temp have a older Hoyt sight, square and I center the pin in my 1/8" verifier peep.

I use the top method because my peep is small. After shooting in the vegas 3 spot indoor league here the last couple of months I want to change to a bigger peep to try the bottom method and hopefully improve my accuaracy.
