I dont know if you can tell the difference between a doe or a buck, but I shot a little young button buck last year and he was by far the most tender deer i have eaten.

For eating purposes only, nothing beats a first year deer. I personally don't think there's much difference in a doe or a buck when it comes to tenderness or taste. An old doe and an old buckare just about the same when it comes to being tough. If I only have one tag, as in Missouri for example, I'll go for a buck... not only for the antlers, but for the size and amount of meat. If I have quite a few tags, then younger does are definitely on the agenda.
The bigger the better? Only in the amount of meat they provide in my opinion.

I haven't noticed any real difference as to age or buck or doe. The one thing that makes a difference is how excited the deer gets before it dies. They taste better when they drop in their tracks without getting scared and all worked up and running for a long distance. It has something to do with adrenalin or hormones being released into the bloodstream.

If the meat is properly taken care of from the killing shot to the table - it should all be good. The older the deer, the longer i like to let it hang. The one exception would be the grizzled old buck that is all battle scarred and worn out - lol

A fawn with spots whiter than snow. [8D]No, but really both are very tasty if prepared well. BTW not to hijack the thread but is anyone watching the GB/Bears game. Chicago is getting . Haha! I love it!!
