Need recipes for making summer sausage, etc
I've got my last deer in the freezer and about 12-15 pounds of grind to turn into burger. I am planning on making this into summer sausage.
So I need recipes to do this. I've got a charcoal smoker (the one sold at walmart) and a grill that has three burners that can be independently turned on or off.
I want to do this myelf otherwise I'd just take it to the processors and have them do it myself. I do my own processing and am now ready to make my own sausage.
Help a hunter out...

You will need a couple of things:
Summer sausage casings
Summer sausage spices
Summer sausage cure
A good grinder
Appropriate sized casing stuffer attachment for your grinder
All above available from sausagemaker.com with instructions. You local butcher shop/meat processor may sell this stuff at a much cheaper price in volume.
Grind the meat with some beef fat (10-15%), mix in the cure/spices and stuff it into the casings. Then, smoke it to a 165 decgress farenheit internal temp.
Last year, I made bratwurst instead of summer sausage and they were more popular (better tasting).
It's ridiculously easy. It just takes time and effort. My co-workers would eat 500 lbs of this stuff per year if I would make it. They're hogs.

Like said above it is very easy. Just add 20% pork with fat and mix together.
