Since you said T/C as a brand I can assure you that the Renagade is the first T/C you should take a real good look at. Next would be a T/C hawkins, plains rifle and a couple of other side lock rifles for shooting with open sites. There are some other brands that are simular but you did say Knight or T/C.
You should also heed the advice of gun writers and wear saftey glasses when shooting. The bother is a very small price to pay to protect your eye sight.

Assuming you can bring two guns along, I'd take an iron-sighted sidelock like a T/C Renegade with a peep, and a scoped in-line. Decide which to carry each day, depending upon how you're hunting.
Any excuse to have more than one gun is a good thing.
