Not many farm boys on here are there???

We used to butcher 20 pigs a year, did it in 2 days time...Made sausage, smoked our own hams, etc...
We also butchered 2 cows a year, in addition to squirrels, rabbits, quail, ducks, deer and other critters that we ate...Any of you guys ever cleaned a turtle??? Makes a good soup...

Some evenings we clean 6-8 deer in and evening, nothing to it...

I'm of the mind that if you can't clean it, you shouldn't kill it. but that's just me.
Ditto!

I've cleaned my share. Down here in LA. they are a delicacy. I like to put snapping turtle meatin my gumbo.Turtle eggs are quite tasty too. We will eat and clean just about anything down here that swims, crawls, runs, or flies.

When each of my boys shot their first deer, each asked me "Are you going to gut it now?" My answer both time was- "You aren't carrying that knife for looks."

This may help you- Gut the deer as soon as possible and do it outside where there is a breeze. Most of the objectionable odor is from bacterial action in the bowels so do not pierce them. Know what you are doing so you can do it more quickly without taking time to figure it out.

It's part of the deal....Deer hunting is fun until the gun goes off. Then the work starts. I don't mind field dressing as much as I do processing. After skinning and quartering, all the wrapping and grinding and stuffing....Whew, my back is already sore.. A lot of guys send theirs to a processor, but I trust my knives and my kitchen more than anyone elses... plus, I know Im getting MY meat and ALL of my tenderloin.

I'd rather gut them than drag them for a mile or two at full weight, but if I can get the 4-wheeler to them I dont gut them, just hang them by the back feet and start cutting, most of the meat is the hams, backstraps, neck and shoulder.hey the coyotes and buzzards got to eat something.
