naive question about quota structure in the US

Hi,
I am a researcher working in management and interested in variations in management procedures. I am trying to gather information for each
species on the most detailed quota structure existing and applied in the US.
For example, for moose in Europe,
the most detailed quota structure arises in Norway and is calf-yearling male -yearling female-adult male-adult
female), and I was wondering whether you could help me with those kind of
information for elk, white-tailed deer, mule deer, caribou and moose in the US.

In Texas, it varies from county to county. In Throckmorton county, a hunter is allowed to shoot one buck and two antlerless. They can shoot one, all, or any combination. Most ranches have additional regulations on size and other things that help manage herds.

in kansas, you can harvest up to 6 deer (i think, it might be 5). your first tag is for a buck and it's about 25 dollars (that's about 20 euros for you), the next 4 or 5 tags are for does, and they're about 15 or 10 dollars.
edit. by the way, this state is pretty much over run with deer. archery season is about 2 months long, rifle season lasts about 12 days.
