It's an excellent food source late season. It will continue to grow after frost kills or slows the growth of many plants and will keep growing as the deer graze it. Plus it greens up early in late winter/early spring, providing much needed nutrition for the deer when little else is available.

Winter rye tends to be a better choice. It grows much faster in the spring, meaning deer can get more fresh greens when they need food the most, and it needs less fertilizer than wheat. Otherwise, I agree with Haystack that winter wheat/rye will make a good fall plot as well.
