Default Winter food sources

Clover and Chickory turned out well, but alfalfa is getting nailed. I wanted to know if there are any winter seedings to help the alfalfa and clover stay consistant?

Now that the acorns are very few and far between, the deer are resorting to the plots, I just wantto make sure they dont devour it before spring. Can I over seed whats down now, without wasting it?

I doubt it, maybe oats or turnips. Getting late for clover, not sure about chicory.
