Default chickory

We have a food plot, approximately an acre, actually about 1.2 acres. The chickory took off this year and it's waist high with a tall growing flowering bud. My question is... should we leave it? Or should we cut it? It's in Central Wisconsin and were getting adequates amount of rain this year. The deer have been using it for bedding and cover, trails are all over through it. Wondering what everyone thinks?
