Carnivores will roll in feces to cover their scent. Many animals will eat the feces of other animals because there are undigested nutrients in it. That's one reason I don't like free range chicken eggs. If they're too crowded they end up eating a large amount of their sister's waste.

I don't think so, but could be wrong. I'd sooner think that the immediate Nitrogen (and P&K) to the spot, does cause plants surrounding it to grow faster and more palatable after a rain, or a few days. Maybe deer feeding on the "fertilized" forage in close proximity to the dropping(s), would give the illusion, that they were feeding on the dung.
