I won't touch the stuff, but my father-in-law loves it all. Liver and onions, and heart breaded and fried.

Nasty!!!

That's the first two things that hit the pan here.
I'm a chef and one of my cooks told me last season...

"Chef, whenever I see the hunting truck pulled up to the back of the restaurant during deer season...I start salivating like a dog 'cause I know what we're eating in a minute!"

I have to save the heart and liver of every deer I shoot. They usually go to my uncle. We just give them to him whole and he does what he wants. I can't get myself to eat the liver, just the smell of liver cooking makes me gag. Heart I have not tried, though I don't see how it would be much different than a tough steak maybe. It serves the same purpose as any other muscle in the body, but the liver however cleans stuff, just doesn't sound good.

I love them if I can get them chilled quickly. On a hot day with a bow killed deer that I had to let set a while, I'll pass. Otherwise, fire up the skillet!

The heart is actually one of the better cuts of meat out of a deer. Slice it thin, dregde in seasoned flour, fry hot until JUST done, salt and eat.

You bet. We eat the heart and liver. I love liver and I think deer liver is as good as it gets. I sometimes give my brother the heart if he does not get his deer..
