Hello all, I am a long time listener but a first time caller. For my first opinion I would like to add that this could also be the work of an opossum. They will many times start at the rump and work in, sometimes even staying in the carcass. Quite the nasty critters they are.

Skunks and possums eat the rear-ends out. This happens overnight. In our area, deer get hit by cars very often. I' ll bet that is what happened.

I would also bet that you have Coyotes as well.
But, I don' t think they got the deer. I agree with the guy that said Opossum. I once got very angry with a bird dog because he wouldn' t stop growling at a dead sheep carcass. To show the dog how stupid he was, I kicked the carcass. I was the stupid one, beacuse a ' possum ran out of the sheep' s butt!

alot of animals will start in the rear of the animal: fox, raccoons, skunks, opposums, vultures, hawks, eagles, badgers, cats, bob-cats, etc, etc, etc. the rear end is full of meat, is pretty easy to grab onto. alot of animals can get their jaws around the stomach or break through the ribs. most all scavengers will start in the anus and work their way in.
