Just get a sharp knife and start cutting, lol.
on the serious side, if you have some friends hunting, try to be there if and when they get their deer and watch.

Also, if you shoot anything which you want to have mounted, i would recommend you just take the animal to your taxidermist and pay the few dollars to have him/her skin it. if its skinned wrong, he may not be able to use it for the mount.

I have a great old vhs video, I'd recommend just trying to get a video/dvd to see it done live....mine shows how to field dress, and cape the skull, and actually seeing it done I think would be better than reading about it.
Sure a simple google search would yield a video or reading manual, print/watch if you really want to go that way.
