It isn't like albino or pie-bald is a sub-species of deer or a rare separate species of deer that we should protect. If I understand it, it is just a genetic disorder. So I don't see any problem with shooting them. Since it is genetic, if you shoot one, then it will likely lessen the chance of that genetic abnomality ending up in your deer herd's gene pool. If you think it is cool or like the look, let it live and proliferate its genes.

I've never seen Albino or Pie-bald deer except in pictures. Are they completely different conditions? I know albinism is a genetic abnomality where there is little to no pigment, but don't know much about Pie-bald, is it like partial albinism?

An albino buck would make a beautiful mount, I would shoot them, unless I enjoyed just seeing one in the wild, a friend of mine's father had an albino buck on their property, and he never shot it, he just liked to look at it, but someone poached it, and that, of course, didn't make them too happy.
I personally, would shoot one, though, 'cause if I don't, someone else will, I don't know if it's legal here or not, but I'm pretty sure piebalds can legally be killed.
