It's just another color phase is all I have taken buck's and does that where a grey color the eyes looked different than any others that I had taken,I live in michigan and 2 years ago I shot a very large doe her coat was a grey color and her ears where very large for a whitetail they flopped over ,when I saw her first I thought it was a muley,I talked to a DNR officer when I took the head in for testing and he said he has seen all different color's from light grey to dark grey,dark red,light red light brown and dark and even a couple that were almost black
