Cut your goose into 1" x 1" cubes. Marinate for 24 hours with a thin marinade that will penetrate. Not the thick marinades that just coat the outside but one with consistency like soy sauce. I like Allegro brand. Skewer the cubes and grill. May change your opinion of waterfowl. If you just threw it in a skillet to cook then yeah, it will suck.

Heres a few ideas for ducks and geese (always best fresh off the bone) sauted with game tame,ducks and rice, bbq duck, deep fried duck, duck fahitas, Jerked, Duck summer sausage(jalepeno and cheese), duck hot links, duck brats, duck stew, duck chili, and of course grilled duck wrapped in bacon. Ducks are not bad to eat but beef is cheaper.

Depends on the duck but i definelty like goose better....I made some goose in a crock pot like you would a roast and it came out great......could not tell the difference!!

Me and my hunting buddy killed 120 canadian geese last year.I froze the breasts first(for safety sake)and made killer homemade sausage and breakfast patties:50 lean pork/50 goose breast.follow a recipie for Italian Sweet sausage and keep the same mixture of spices+add a little brown sugar and liquid smoke.

OMG the culinary barbarians!! Waterfowl should be cooked to med rare or ever so slightly past it if you must. If it's done in the pan it's ruined on the plate. Do not marinade if it contains salt or soy for more than 20 minutes.
Wild game cooking has become a lost art. Ducks and geese are fantastic table fare and the demand for waterfowl is what drove the engine in the market hunting era.

Teal duck is the worst meat ive ever had. most other ducks are alright but when 2 bluetick coonhounds wont eat it you know its bad lol. but goose is to die for! its way better then duck and bigger so if you are a hearty eater its better.

alot of ducks taste alot alike to me but i cant stand gadwall and magansers...geese and mallards taste alot alike but i think the best is teal just skin the duck put it in some flour and fry it thats some good eatin right there...ive tried every way there was to ccok a duck or a goose and thats the best way i think a duck or a goose can be cooked...

I like it all but you have to cook it right just as anything has its best ways of being cooked, one crowd favorite around here is cut into thin strips,marinate for 24-48 hrs in italian or a vinigarette wrap with bacon and grill to a max doneness of medium....overcooking brings out the worst in waterfowl, it tastes best rare....
