Best table fare?
I'm not a huge waterfowler but I do get out once or twice a season.
In the past we've always harvested lots of blue and green winged teal, and some mallards and woodies.
Saturday was our opener and I shot 3 blue bills, I've never tried them and was wondering what to expect. I know they dive but are they fish ducks?
My experiance with eating has been (best to worst):
Canada goose
Mallard
Woodie
Teal

From what ive experienced, they all taste the same. I can make a gumbo of all the waterfowl species and cant tell the difference between them. The best table fare though is the sandhill crane.

Gotta go with Mallards and as TG said, Sandhills. For the Bluebills,put them in a small roaster(whole birds)stuffed with orange and onion sections. One hour a 350 until just pink inside. Enjoy!<img src=icon_smile_tongue.gif border=0 align=middle>

Teal are the best tasting duck by far. Blue Bills aren't fishy ducks they do have a little wilder taste to them than others but in my opinion all waterfowl is an excellent meal.

I have no experience with bluebills, other than my Gordon McQuarrie books, but would have to rate teal at the top of my list. I have heard it said that bluebills are good eating until their diet consists mainly of fish.
