I would go with a 5dMKiii and grab some nice L Glass from Canon. The lowlight capability of the Canon out performs the lowlight of the Nikon D800. Plus you get better video if you choose to go that route as well!

Wildlife photography is a major genre of the field. From wild elephants to migrating birds and butterflies, wildlife presents an ever-changing scenario for the photographer. There are a number of demands with wildlife photography that make point and shoots are poor choice. The main issues are shutter lag and the limitations on lenses. There are several excellent DSLR’s in cost effective price range. My recommendation would be to focus on Canon and Nikon as these two have more lens and accessory options. A few options are the Canon XTi, the Canon XT or the Nikon D40. My experience is with Canon but I am confident that the Nikon’s would be equally good.

Default Canon T2 or higher with a standard fast lens

I've used a range of Canon and Nikons, but to not break the bank and have a reliable setup, you can't go wrong with a Canon T2 or newer and a fast Canon EF 50mm F/1.8, and a decent zoom lens for those long range shots. I never leave home without the Standard 50mm.
