Whats the ideal recurve for a whitetail hunter?

If you've got a draw length of 29" or more, in my opinion, stay away from a 58" bow because it'll give you a case of finger pinch. Longer bows are more forgiving than a short bow too.
The majority of bows bowhunters in this day and age hunt with are 60"-62" in length. Their draw lengths are 27"-29".
With some bowhuunters having draw lengths of 30", like me, the majority of us tend to favor 64"-66" bows.

58" bow will be fine. I use 33" (raw) shafting to make arrows and leave it at that length. Look for an old Bear Grizzly or Black Bear. The ugly colored ones go pretty cheap. Make sure it has silk screened logos and not decals, some of the early ones were made without a lot of research. You can not beat the way a Bear was manufactured in the late 50's and early 60's. I would be afraid to over draw (32") most other bows the way I do my Bear.
