Your right JohnnyHildo....it is best to use a Caliber Rifle that is going to make a quick humane kill!
Sheridan....I'm shooting a CZ "Varmint" in a .204 using 39 grain Sierra Blitz Kings that do a great job of putting down the Coyotes,plus it's easy on the fur and it will work very well on smaller Game like Foxes and Bobcats!
I'm also shooting a Savage Axis XP Camo in a .223 using the same thing as You in the Hornady 55 grain V-max bullets....I've put down 2 Coyotes with it so far and they work very well.
The next Rifle I get is going to be either another CZ in the model 527 "American" in a .22 Hornet or possibly the new Ruger American in a .243 and use the lighter Hornady bullets in the V-max caliber?

To me Coyote killing is more for herd management than fur trade. I use my Ruger American Rifle in 308 win. If the cattle eat the grass down so its not over my head I may get a chance to get out do some more hunting.

I've killed coyotes with the .17HMR, along side several other cartridges in the last 20+ yrs. After all of the trial and error, I'm a .223rem all the way. 50-55grn pills, V-max's are hard to beat.
Longer range shots, I'm either .243win or .243WSSM (in AR-15 platform), or REALLY long range shots, I'm playing with a 6.5-284 and a .300WSM these days.
Bigger bullets should be reserved for longer ranges where they'll be slowed down enough to not make a gooey mess, and avoid hitting the shoulder with the heavier cal's.

Here and there and everywhere my friend! Finishing up a trial at work, fixing to have a baby any day now, and I started training for a 14mi Obstacle Course Race coming up this fall, so my casual computer time (as well as my calling time ) has been swallowed up. I try to pop in once a week and do so reading here, just haven't had much time to myself these days!
BUT, as the sun rises, so also shall it set! After the 4th of July I go on R&R basically until late Sept/early Oct, so I'll be sitting back enjoying some home time with the baby boy and the missus, scouting whitetails, and hopefully calling in some summer coyotes!
