Same principal as cleaning almost any game.
Step 1: Cut head, feet and hands off
Step 2: Skin
Step 3: Gut
Step 4: Use all available meat
Step 5: Wash off with water
Step 6: Marinate all night with your favorite marinade
Step 7: Put in crock pot all night on simmer to tenderize the meat with vegetables and other ingredients
Step 8: Feed your face

Yeah, what he said. Except I like to dredge in flour with a little salt and pepper fry like chicken MMMMMMMMMM good. Better I quit now before I screw up my kkeyboard drooling on it. Good luck and enjoy!!
