I' ve never cooked a swan myself; but I imagine that you would treat it much like a duck, since they are both waterbirds. The swan proably has a layer of fat similar to a duck, so DON' T smoke...

I don' t have any recipes, but I do have a piece of advice. NEVER smoke a duck! I smoked one once...the smokey flavor gets trapped in the fat....it was terrible...I never waste food, but the dogs...
