Whats up isn' t there anyone out there making POTATOE SALAD for EASTER ;Htngirl that Meatloaf reciepe is awsome, Howabout one for Potatoe Salad? Just want to Pick your Brain, or should I say your Old Fashioned Secret Reciepes ! Thank You......

Well I' m not Htngirl but I do have a potato salad recipe if your interested.
2lb potatoes (about 6 medium)
1-1/2 cups mayonnaise or salad dressing
1Tbsp vinegar
1Tbsp prepared mustard
1tsp salt
1/4 tsp pepper
2 medium stalk celery chopped (about 1 cup)
1 medium onion, chopped (about 1/2 cup)
4 hard-cooked eggs, chopped
Add chopped or sliced radishes (optional)
Prepare and cook potatoes; cool slightly. Cut into cubes
Mix mayonnaise,vinegar,mustard,salt and pepper in large bowl. Add potatoes.celery and onions; toss. Stir in eggs; cover. Serves 10
Enjoy.

this one was on the web site i posted earlier, you might want to check the site and this out:

2 pounds equal-sized boiling potatoes
3 tablespoons cider vinegar
1 teaspoon salt
3/4 cup chopped celery
1/2 cup chopped white onion
3 large hard-boiled eggs, chopped
1 cup mayonnaise
Salt and freshly ground black pepper

Cover potatoes with salted cold water by 2 inches in a 3-quart saucepan and simmer uncovered until just tender, 15 to 25 minutes, depending on size of potatoes. Drain in a colander and cool slightly.
While potatoes are simmering, whisk together vinegar and salt in a large bowl until salt is dissolved.

When potatoes are just cool enough to handle, peel potatoes and cut into 1-inch pieces, adding to vinegar mixture as cut, and toss gently with rubber spatula to combine. Let cool to room temperature, then add remaining ingredients and salt and pepper to taste and stir gently to combine. Serve at room temperature or chilled.

Embarrassed to say my potato salad recipe is Safeway Deli. Put it in another bowl, sprinkle with papriki, and that' s it. LOL! Thanks for the compliment on the meatloaf though!

Ok here Lets see.
One potato/person washed and diced
presure cook them till done.
Add diced onion, about 8 diced sweet pickles, 4 diced eggs, and mashed potatos
add mayo and mustard to taste.
Salt and pepper to taste
Mix well and enjoy.

I have served this potato salad at many occasions and never once had to take any leftover home! I love it!

State Fair Potato Salad
(Drizzling the sweet pickle juice over the warm potatoes is the secret to this delicious potato salad.)

3 ½ pounds red-skinned potatoes, unpeeled, cut into ¾ inch pieces
¼ cup juices from jar of sweet pickles

¾ cup mayonnaise
1/3 cup buttermilk
4 teaspoons Dijon mustard
1 teaspoon sugar
½ teaspoon ground black pepper
½ cup chopped red onion
½ cup chopped sweet pickles
½ cup chopped celery

Cook potatoes in large pot of boiling salted water until tender, about 10 minutes. Drain; transfer to large bowl. Drizzle pickle juices over potatoes and toss gently to blend. Cool to room temp.

Which mayo, buttermilk, mustard, sugar and pepper in medium bowl to blend; season to taste with salt. . Mix in onion and pickles to mixture. Pour over potatoes and toss gently to blend.

What kind of pickles are sweet pickles? Would Bread & Butter Pickles be considered sweet. What brand and kind do you use. Thank you in advance. The potatoes are cookin.

jerseyhunter: You can use any pickles that are labeled as sweet...you could substitute relish, but then you don' t get any juice....drizzling the juice on the warm potatoes gives a nice flavoring to the salad, and you won' t get that with relish.
