I take mine to a friend who has a butcher shop in his backyard. He has a huge walk-in cooler and he skins the deer and then lets them hand at keast 5 days before cutting. I think the aging really helps with the taste.

I do mine but once a year we take one to a butcher to have burger and sometimes jerky made. I have a dehydrator so if we take one in it will just be for burger this year.

I cut my own up. I like to know what meat i am eating. A lot of people dont take care of the deer when they field dress it.
