I've used a Buck 119T for quite a few years now and it is by far one of the best knives ive ever used. Its got an extremely sturdy all metal design. its a fixed blade an will prob set you back a little over a $100 but it is one hell of knife.

i have used a wyoming cleaning knife for about 20 years. i think it is the fastest safest cleaning knike on the market. it has a 1 inch blade on one side and a zipper blade on the other with finger holes so your grip never slips. i would guess i've cleaned a 100 deer with this knife. great design

I lost my Buck folding hunter and my Buck special is my favorite skinning knife but I tried Knives of Alaska from Cabelas for field dressing and I love it. Its short and has a thumb rest for leverage and saftey. It doesn't hold an egde like Buck but it will do.
