I just made some up yesterday. I use equal amounts of pork to the venison.. I buy Atkins Sausage season. I stuff them and smoke them four about four or five hours at 150-170 degree. I also take some and make them into patty's for breakfast sausage.

For hog sausage, I do the same equal amount of store bought pork, you need the fat to make it all stick together good. Unless you killed a real young pig that might have some baby fat.
