Have heard that even if the animal reaks before skinning and gutting it can be good. Thé test to do before putting to much effort on butching is to frie a small chunk with a cigarett lighter and find out.

Have also heard that putting a piece of meat in the micro wave ovenwould work the same way. Ifthe meatis tainted however the smell in the micro would work as apeople repellant.

And these are ruomurs. I have neverencountered boar scent. If minced even big ones are good.

They are good eating, the dogs love them anyway you cook em and the smell will leave the house in a couple of weeks and you will never know one has been cooked there.

every hog i shoot, if it's a boar i cut him in the field. after skinning, i quarter it up and place in a big clean ice chest where i put plenty of ice and vinager. normally about 3 gallons of vinager. the vinager seems to take the game taste out and also makes it tender and adds flavor when smoked.

Back in ancient times when I was a youngster at Inglis, not everyone could hunt hogs. You had to have released breeding stock, and have a mark reg. at Bronson in the courthouse before you could hunt unmarked hogs. Everyone knew his neighbors mark and would mark his pigs for him if he found a sow with pigs. Only adult, unmarked hogs were fair game. Young boars were marked and casterated if possible. Those that weren't caught as young pigs became a real danger to the cur dogs that were used to round up the range cattle and hog herds. Any big, old, rank boar would be shot and simply left in the woods so he didn't kill someone's valuable dog or, chase one of Bro Reb's Tampa buddies out of the woods. Just kidding. There was never a shortage of sows, young boars, and the prefered Barr Hogs to put on the table to mess with the old boars.

Dumb question, but the site Reb posted says to make sure all the hair is removed from the pig. How, exactly do you do that?

Eto, I can see you have'nt done much hog butchering!;)We butcher around 25-30 hogs each yearfor the holdays and been doing it for the last 45yrs!
You drivethree 3/4" pipes in a triangle to fit undera 55gal drum filled half with water. You start a fire under the drum and wait untill the water is sculding. Then, you drop in a couple of burlap sacks in the water. Then have the hog on a butchering table and using 3/4" pipe, pull the sacks out of the sculding water and place on the hog. repeat this a couple of times. Then using the back of the butchering knife, start scrapping the hair off the hog. The hair will come off easy. Keep doing this untill all the hair is off. Using the hot water keep rinseing the hog with it to see how you are doing. After you have removed all the hair, hose the hog down! The skin will be smooth, white and cleaned. We roast the hog with the skin on.
