A good finish to go along with a stainless or chromemoly gun is Robar Np3 . Or you can simply wait until Remington puts out their XCR's for sale that is probably a great finish as well.

My gun smith has made the comment he really likes machining Stainless. He says it cuts smoother and more easily for some reason unknown to me.

Ooh, pricey. I agree. I think those FN SPR's have that.

Wow I am an apprentice machinists right now, and after a year of turning metals on the lathe and using a Chavelier mill I have never heard the words "Stainless is easier to mill/work with" granted I have never turned a barrel to date, but I cant believe that Stainless barrels are easier to work then regular steel.
