I think you'll be happy with the Wolf - a lot of guys on the blackpowder forum have had good things to say about it. I have a different model CVA and have been very happy with it. Yeah, it's not as pretty or well-finished as a Knight or TC, but it shoots really well, and that's all I care about. Make sure you get a half-decent scope to go with it - makes a big difference.
You really should check out the Blackpowder forum on this site - lots of good info. Do a search and type in "Wolf" and you get a wealth of info about your rifle.
A couple notes if you're getting into muzzleloading:
-I would highly recommend getting a can of loose Triple Seven powder, as opposed to pellets. It will cost you about $24 a can if you don't get it on sale, but put a few of those silica gel packets (you find them in a lot of packages you buy - they absorb moisture) in the can after you open it, and if you only shoot 3 or 4 times a year, that can will last you for several, if not many years. My hunting buddy would be kind of like you - only sights in and practices with his ML twice a year maybe, then goes hunting. He has a can of Triple Seven that has lasted him at least 4 years now. You'll need a powder measure too, but that's no big deal - pick one up for $10 or so.
-I'm usually posting on the blackpowder forum, and the guys on that forum that have CVA Wolf's recommend using the 240 or 250 grain Hornady XTP. You can buy them pre-packaged with sabots online, or at most gun stores. They're not very expensive, either. Powerbelts also shoot well, but they are more expensive and you have to be very careful about how fast you push them or they tend to overexpand, fragment, and otherwise cause bad things to happen.
