The 270 Win will do it all.. if you want an all around gun... If I were hunting the animals you have suggested and could only have one gun I would go with a 300 Win Mag... I would not delv in he world of Short Mags... Short Mags came about as a results of manufactures needing something else to sell to the public + they could use a shorter less expensive action.
A lot of what you are requesting - really depends on the terrain that you hunt...

300 Winny if I was going to actually hunt a lot of Moose to go with the deer / elk
270, 30-06, 308, 7mm Mag if I'm mostly going to hunt deer & elk
25-06, 260, 7mm-08 if I'm mostly going to hunt deer.

280 would be my smallest choice, and, one of my more favored of the ones listed. I like the options that the 7mm and 30 caliber cartridges have for larger game. The 30-06, 7mm RM and 300 Winmag would be high on my list as well.

I agree the short actions are just another marketing ploy. I've fallen to marketing ploys myself. They do shoot good but I also agree the 300 win mag is one of the greatest cartridges designed for BIG game. If you can shoot that round well it would be a great choice considering the size of the animals you mention. If it was me though, I would use my 257 Roberts or my 280 Rem or my muzzleloader. I know the 257 is small for moose/elk but I know what shots I would restrict myself to. I can shoot the above mentioned rounds well. That means more to me.
