For everything I take it you mean an all around hunting rifle. I would go with the 300. The 308 would be my pick on deer but if you are going for elk or moose the 300 is better. The 308 will kill them but I like to think on the side of insurance. Use a light bullet in the 300 on deer though.

Seriously, consider what you will hunt, and where. Out to about 250 yards or so, a .308 will kill anything that you can kill with a .300 Win. Mag., without the recoil, noise, and expensive ammunition. You just need to pick your shots a little more carefully.

The way I look at it, if you don't think a .30-'06 (or .308) will kill the critters you're looking to kill, then you probably need something MUCH bigger: .338 WM, .375 H&H, and on up the food chain.
When I decided to get back into hunting, & to start with elk, I went through the whole caliber-selection quandary. I settled on the '06, figuring I didn't have the energy to master shooting a cartridge with vastly more powder in it.My .30-'06got my elk this Fall with no problems.
Turns out my outfitter has got a slot open fora '08 Shiras Moose Hunt in SE BC. I won't be getting another rifle for this hunt.
Now, if I were to chase coastal bears, then I'd probably pony-up for a .375. But I'll throw myself off that bridge when I come to it.
