A guy I do business with eats carp. He smokes them. says they are one of the best fish to eat when they are smoked. He lives up in
Green Bay Wis. Lots of Salmon and Trout up there to compare with. Maybe worth a try. I've eaten carp once.....I was about six years old (19 years ago) so I don't remember what it tasted like. I don't remember it being really bad though....

Them big boys are fun to catch even if you don't keep them, we catch them when we are catfishing all the time...nothing like a 20# carp on 12# test line for a fight !!!!
I've eaten smoked carp too, very good, tastes just like smoked herring !!
