The 7-08 would be a good choice. I have this same chambering in a Browning Micro hunter and it does a good job on deer. My T/C Contender is chambered for the 7-30 Waters. Very similar to the 7-08 but not quite as much punch. I took 2 whitetails with this setup and it performed well. I use Hornady 120 gr SSP bullets (Single Shot Pistol) for more reliable expansion at the lower velocities. The jackets on these bullets are a bit thinner than the rifle bullets.

You may or may not have already done this, but you should check to see if the game laws in your state allow the use of pistols shooting rifle cartridges, especially if they don't allow rifles already.
In Iowa, CF rifles are not allowed for deer hunting, and pistols are legal but only if the pistol is chambered in a straight-walled cartridge designed primarily for pistol use. Therefore we can hunt with an Encore or Contender chambered in .454Casull, but not in .45-70. All bottleneck cartridges are not allowed, but I think that the DNR is considering making an exception for bottleneck pistol rounds like .357Sig and .400 Cor-Bon, etc....
Might be worth checking into before you spend money on a barrel you can't use.
