I processed all my Venison and pork this past season, 5 Deer and 8 hogs, using only a hand grinder. So while these high dollar electric grinders are nice it really isn't that tough to turn the handle while feeding in the meat. I must still have 150lbs of breakfast patties left in the freezer, the kids love it. I just found a sausage spice mix at the local country store and mixed it in. Yes a 3/16 is fine enough of a grind. I also have a bunch of patty sausage that is 50/50 deer and pig also tastes pretty damn good.
Also grind some a bit more coarse and you will find it is real good for Tacos.
If your gonna do a larger pig on your own, wash it off real well with a much pressure as you can before you start, try not to poke any of the guts while cleaning, these 2 things will make a much less smelly project for you.
