Water quality s definitely the culprit, so if you can get fish from waters not suffering algae and silt problems, then do it.
Things I do with wild catfish:
1. ALWAYS skin the fish.
2. ALWAYS remove the lateral "vein" (lateral line). You can find it on the lateral line of the fish, running down the center of each of the fish's side. Just make a small cut at the top of a fillet along the lateral line, peel back the flesh a it, and you should see the vein. Gently take it between thumb and forefinger and slowly tug it out. The whole thing should slide out.
3. Soak the fish overnight in raw minced garlic, salt, a splash of vinegar and milk.
This will not completely remove the ogre taste, but it helps considerably.

For fish whose ogre taste is stubborn, I chop up the meat and throw it into a catfish gumbo, with corn, 'maters, okra, bacon, and a lot of other stuff. Mercy, is that good.
